A tropical, evergreen tree, that grows to an average height of 12 - 15 metres, and originating from the Banda Islands of Indonesia. The Nutmeg tree will start fruiting by the 6th year and will peak its harvesting period after 20 years. The fruits are ready to harvest 9 months after flowering, as flowering and harvesting cycles continue throughout the year. The harvested fruit are then split open, with the outer flesh being removed, leaving behind the mace, which is manually separated from the nut. Both are dried separately, with attention to the colour changing of the mace, starting with scarlet colour, which in turn will dry out to a gradual yellowish-brown, and becoming brittle, which then the drying process is complete. The seed within the nut is then distilled.
